Beet, strawberry and chia pudding

Ingredients

1 package (397 g) of Champêtre cubed red beets
125 ml (½ cup) of chia seeds
565 ml (2 ¼ cups) of cold almond milk or other plant-based milk
125 ml (½ cup) of fresh strawberries
5 ml (1 tsp) of vanilla extract
15 ml (1 tbsp.) of maple syrup (optional)
Optional toppings to taste: berries, nuts, seeds, granola

Steps

  1. In a bowl, place the chia seeds.
  2. In a blender or food processor, blend your plant-based milk of choice, strawberries, beets, and vanilla until smooth.
  3. Slowly pour the mixture over the chia seeds. Stir until everything is well blended.
  4. Leave to rest in the fridge for at least 4 hours.
  5. Just before serving, stir in the maple syrup.
  6. Pour into the verrines of your choice. Garnish to taste with berries, nuts, seeds or granola.
