Beet, strawberry and chia pudding

Ingredients
1 package (397 g) of Champêtre cubed red beets
125 ml (½ cup) of chia seeds
565 ml (2 ¼ cups) of cold almond milk or other plant-based milk
125 ml (½ cup) of fresh strawberries
5 ml (1 tsp) of vanilla extract
15 ml (1 tbsp.) of maple syrup (optional)
Optional toppings to taste: berries, nuts, seeds, granola
Steps
- In a bowl, place the chia seeds.
- In a blender or food processor, blend your plant-based milk of choice, strawberries, beets, and vanilla until smooth.
- Slowly pour the mixture over the chia seeds. Stir until everything is well blended.
- Leave to rest in the fridge for at least 4 hours.
- Just before serving, stir in the maple syrup.
- Pour into the verrines of your choice. Garnish to taste with berries, nuts, seeds or granola.
