Patatas bravas

2 packages (2 x 368g) of Champêtre Parisian potatoes
45 ml (3 tbsp.) of olive oil
3 ml (½ tsp) of salt
30 ml (2 tbsp.) of mayonnaise
2-3 dashes of hot sauce (optional)
5 ml (1 tsp.) of sweet paprika
1 ml (¼ tsp) of smoked paprika
1 ml (¼ tsp) of salt
½ ml (⅛ tsp) of garlic powder
30-45 ml (2-3 tbsp) of water


  1. Preheat oven to 375°F. Line a large baking sheet with parchment paper.
  2. Cut the potatoes into 4.
  3. In a bowl, place the potatoes and drizzle with olive oil and salt. Mix until well coated.
  4. Place them in a single layer on the baking sheet.
  5. Bake 30 to 45 min., or until golden brown.
  6. Meanwhile, in a small bowl, combine the mayonnaise, hot sauce, paprika, smoked paprika, salt and garlic powder. Add water and whisk until smooth and creamy.
  7. Pour sauce over hot potatoes just before serving.
