Burrata and red beets

Ingredients

1 package (397g) of Champêtre diced red beets
45 ml (3 tbsp.) of olive oil
2 large burrata
65 ml (¼ cup) of fresh dill, finely chopped
65 ml (¼ cup) of shelled pistachios, coarsely chopped
Fleur de sel
Microgreens of your choice

Steps

  1. Drain the beets and cut them into smaller dice.
  2. Place the beetroot dices in 2 bowls.
  3. Pour the olive oil over the beets. Place one burrata per bowl over the beets. Sprinkle chopped dill and pistachios on top.
  4. Finish with a little fleur de sel and garnish with microgreens.
