Greek style turkey patties

Ingredients

2 packages (2 x 397 g) Champêtre Greek Potatoes
1.25 lb ground turkey breast
½ small red onion, finely chopped
125 ml (½ cup) of red peppers
65 ml (¼ cup) of pitted Kalamata olives
65 ml (¼ cup) of feta cheese, crumbled
65 ml (¼ cup) of panko breadcrumbs
65 ml (¼ cup) of fresh parsley, finely chopped
1 ml (¼ tsp) of dried oregano
2.5 ml (½ tsp) of dried dill
1 pinch of salt

Yogurt sauce:
125 ml (½ cup) of plain Greek yogurt
Juice of half a lemon
½ peeled cucumber, grated
1 clove garlic, minced
1 pinch of salt
2.5 ml (½ tsp) of dried dill
15 ml (1 tbsp.) of fresh parsley

Steps

  1. Preheat oven to 350°F.
  2. In a food processor, finely chop half the onion, the red peppers and olives.
  3. In a large bowl, empty the mixture from the food processor. Add turkey, panko, feta cheese, salt, dill, oregano and parsley. Mix with your hands and form 4 balls of equal size.
  4. On a baking sheet, place the Greek potatoes. Bake for about 10 to 15 minutes, or until golden brown. Turn them halfway through cooking.
  5. In a grill pan over medium heat, spray with cooking spray.
  6. Place the balls and flatten them with a spatula to form patties.
  7. Cook for about 10 minutes or until the meat is cooked through.
  8. Meanwhile, in a bowl, combine all the ingredients for the yogurt sauce.
  9. Serve the turkey patties with their sauce, the Greek potatoes.
