Quinoa, red beets and goat cheese salad

Ingredients

1 package (397g) Champêtre cubed red beets
250 ml (1 cup) of cooked quinoa
3 mandarins, peeled and diced
125 ml (½ cup) of crumbled goat cheese
30 ml (2 tbsp.) of Italian parsley, finely chopped

Steps

  1. Cook quinoa according to package directions.
  2. Put in the fridge and let it cool completely.
  3. In a large bowl, place the cold quinoa, beets, mandarins, goat cheese and parsley.
  4. Mix gently until everything is well blended.
  5. Serve immediately.
