Quinoa, red beets and goat cheese salad

Ingredients
1 package (397g) Champêtre cubed red beets
250 ml (1 cup) of cooked quinoa
3 mandarins, peeled and diced
125 ml (½ cup) of crumbled goat cheese
30 ml (2 tbsp.) of Italian parsley, finely chopped
Steps
- Cook quinoa according to package directions.
- Put in the fridge and let it cool completely.
- In a large bowl, place the cold quinoa, beets, mandarins, goat cheese and parsley.
- Mix gently until everything is well blended.
- Serve immediately.
