Chicken salad, yellow beets and blackberries
1 pack (284g) of Champêtre diced yellow beets
1 container (312g) of spring mix salad
50ml (2 cups) of chicken breasts, cooked, sliced
1 pack (170g) of fresh blackberries
85ml (1/3 cup) of crumbled feta cheese
65 ml (¼ cup) of green onions, thinly sliced
65 ml (¼ cup) of fresh tarragon, minced
4ml (¼ tbsp) of white wine vinegar
45ml (3 tbsp.) of lukewarm water
20ml (4 tsp) of olive oil
A pinch of sea salt and pepper
- In a bowl, whisk together the dressing ingredients.
- In a salad bowl, gently mix the lettuce, chicken, beets, blackberries. Pour the dressing.
- Serve in individual bowls and sprinkle with feta.
